If there is anything in the world that my grandma loves, it's Mexican food. I have many fond memories of going out to eat with her at her favorite little Mexican joints. In fact, my mom has actually had Mexican food delivered to my grandma for her birthday dinner! It's no wonder that I could eat tacos and burritos all day, every day - it's genetic! (At least that's what I'm telling myself).
In case you're tucked under a rock somewhere, today is Cinco de Mayo - as if I needed a reason to eat Mexican food! Ha. In the spirit of the day & to celebrate the love for spicy foods that my grandma & I share, I thought I'd remind you of a couple of my favorite recipes. Enjoy!

Hey Love! When things seem blue around the best thing to do is make a meal to enjoy. It is instant gratification for sure! My go to Mexican meal is Mexican lasagna... super easy. Make a pound of taco meat (ground chicken, turkey or beef work great and just a packet of your Mexican seasoning), Get out a casserole dish and spray the bottom with PAM. Layer tortillas, meat, black beans, salsa, and then cheese - repeat and top with lots of cheese. Bake at 350 for 30 mins (or until bubbly)and enjoy! I top with sour cream because I cannot help myself. We think it is delish!! Keep your chin up Love and call your family as much as you want. I am thinking about you! xoxo!
Definitely sending lots of prayers your way! And I'm always up for a trip to Mexico (you know what I mean) if you ever need a Mexican food fix ASAP to get your mind off of things! I'm always happy to take one for the team and eat Mexican food! :) I really hope things start looking up soon for you and your family though.
