If I wasn't here, I'd be there

It's always approximately this time of year when I start to get really antsy and cabin-fevery: I love winter, and will always prefer being cold to being hot, but it reaches a point where it's just too much. I inevitably find myself researching vacations and daydreaming about spontaneously escaping for a few days.... the likelihood of actually ever doing this is slim-to-none, but thinking about it saves my sanity for a couple of hours. If only I had a bigger bank account and a lot more vacation leave saved up. Wishful thinking! But how good do these deals look?


IRELAND! Another Groupon Getaway. OMG, what I'd give to hop on a plane...

A quick two-day cruise to the Bahamas with Groupon Getaways... that would be enough, wouldn't it?

Wine tasting in Carmel, CA, with LivingSocial Escapes - I'd be there in a heartbeat.

I had a work trip to Florida booked for next week, and the thought of it was keeping me going... and then we had to cancel. BOO. Seriously. Work, sure, but Florida, also! Where it's sunny and 70 and not windy and gray and cold. It would have been amazing to be there for a few days instead of here.

What's your best cure for winter weather blues? If you could go anywhere today, where would you go? I'm talking pack-a-bag-and-you're-gone.... what's the destination for you??

A girl can dream...

Do you ever daydream about what you'd do if you suddenly found yourself with a little spare cash? I mean, I know the right answers - invest, put it in a rainy day fund, pay off a debt or a bill... but what if you didn't have to do those things? What if you just suddenly found yourself with an extra chuck of change, and you could do whatever you wanted with it? Wouldn't it be fun to have the luxury, just once, to go out and do anything you wanted with it? Let's just dream about it for a minute or two...


The first thing I'd do is finally hit "purchase" on my Pottery Barn shopping cart - I've had new drapes for our main floor sitting in there for month,s and I just cannot pull the trigger! I'm dying for new window treatments now that we have pretty new paint on the walls, but the only curtains I've found so far that I love cost an arm and a leg - PER PANEL. Whyyyy don't they come in sets of 2, at least?? Anyway. Those curtains would set me back $389.

Left with $611, I'd then hit "purchase" on my Lucy shopping cart, and finally buy myself two new pairs of leggings. I adore my Lucy leggings (I have a pair of the X-Training Capris and a pair of the Hatha Capris) and I wear them constantly, both for workouts and for lounge wear, and I could definitely use some new ones. Buying a one of each type would cost me $158.

With $453 still in my wallet, I'd head to my favorite day spa and book a day of pampering. I've been craving a massage for months now, and what girl wouldn't want to take her spa experience to the next level? A package including a sugar scrub mani and pedi, deep cleaning facial, massage, eyebrow wax, and shampoo, cut, and blowdry would cost me $348, including a tip.

At this point, I'd be completely relaxed and blissful, and be looking to spend my remaining $105. A dinner date with my husband sounds like the perfect way to blow that last chunk!

I'd make us a reservation at one of our favorite local restaurants, Poppy Hill, and we'd get all cleaned up and pretty before heading to dinner. Once seated, we'd order a bottle of wine and their crab crostini appetizer to share. Then, we'd order entrees - chicken parmigiana for her, chianti blueberry BBQ short ribs for him. We'd slowly enjoy our meal and our wine, and even though we'd be completely stuffed, I'd convince C to get a homemade chocolate chip cannoli to share - can't pass up amazing dessert opportunity!

When paying our tab, we'd be a little generous with the tip, and the total would end up to be $104

Happy and full of delicious Italian food, we'd make our way home to get comfy on the couch and continue binge-watching Parks and Rec (I just can't stop!) - the ideal evening!

If you've been following along with my math, you'll know that I didn't quite spend all $1000... I've got $1 left. What to do with that dollar?!.... Put it in savings, of course! :)

Five for Friday: Travel Edition

I have traveling on the brain! C and I are in the process of applying for passports, and I'm determined to get us out of the country this year for a trip. We've been dreaming / talking about a trip to Europe since we first started dating, and I think this is the year we make that first adventure happen. In honor of that, this Five for Friday features the top 5 destinations I'd jump on a plane to this minute if someone told me it was possible. Where would you go??

1. Germany
I'd love to show C the town where I was born, and the thought of having an authentic schnitzel, in Germany, has my mouth watering. Seriously!

2. London
I have a minor love-affair with all things London - so of course this ranks high on my "places I'd love to jet-set to" list. The history absolutely fascinates me, and I'd never run out of things to see and do!

3. Greece
Enough said, right?? Greece has always been on my list of places to go. I can't get over how breath-takingly gorgeous it is.

4. Ireland
Ever since seeing the movie PS I Love You (watch immediately; so good!!), I've been craving an adventure to the Irish countryside. Everything is always exactly as it's portrayed in the movies, right?? I've got to go!

5. Sri Lanka
A bit random, sure, but just look at that - the beaches in Sri Lanka look incredible. Plus, it has tons of history, so if I wasn't lounging in an oceanside villa, I could explore and get my education in, too. Great combination!

Feelin' Soupy

I woke up to pouring rain this morning, and it was a struggle to get out of bed. What I really, really, really wanted to do was stay home in my jammies and cook something delicious. Currently on my list of "Why Don't I Have Time to Make This?!" are chocolate chip banana bread (craving that in a serious way!) and split pea and ham soup (also craving that badly). I have all the ingredients for both, I just haven't actually had the time to make them - and I still won't, as we have a jam-packed weekend ahead of us. While it will be fun, I'm just a smidge disappointed that I can't spend my Saturday wrapped in my apron, filling my house with the foodie-smells of fall. Dreamsss.

But then, as I was sitting as my desk this morning, it hit me - the exact recipe that I have to share. Drum roll please.... roasted tomato soup with broiled cheddar.

This recipe is from Smitten Kitchen, and I made it last winter and then forgot about it. I don't know how - it is one of the most amazing things I've ever eaten. It's so simple, but it hits that "comfort food" spot dead-on. The soup has incredible flavor from the roasted tomatoes - it doesn't taste at all like "ketchup and milk" (which is the reason C usually won't eat tomato soup). You can obviously just put together a batch of it and eat it out of a bowl, but I did it just like it's pictured: French Onion Soup style, with a piece of French bread floated on top and buried under a mound of broiled sharp cheddar cheese. Life-changing.

This is the soup that my tomato-soup-and-grilled-cheese loving heart is made of. As if all that wasn't incentive enough to make it, it's actually really, really easy, too! Most of the time required is spent waiting for the tomatoes to roast. So worth it, though!

I'm practically drooling over the idea of a piping-hot bowl of this soup with a sourdough bread & sharp cheddar grilled cheese next to it.... ahhhhh. Someone make this soup for me! I will love you forever.

Roasted Tomato Soup with Broiled Cheddar
Recipe from Smitten Kitchen

Serves 4 (though closer to 6 if served in mugs)

Soup
3 pounds plum tomatoes, halved lengthwise
2 tablespoons olive oil
2 large or 4 small cloves garlic, unpeeled
1 teaspoon finely chopped fresh thyme leaves or 1/4 teaspoon dried
1/4 teaspoon (or more to taste) dried crushed red pepper
4 cups chicken or vegetable stock

Lid
4 1-inch slices from a large loaf of rye bread, whole wheat sourdough or bread of your choice (or 16 1-inch slices from a baguette), toasted until hard and lightly buttered on one side
1 tablespoon grated raw onion
1 cup coarsely grated cheddar (or more to taste)

Make soup: Preheat oven to 400°F. Wrap garlic cloves in a tight foil packet. Place tomatoes, cut side up, on large baking sheet. Sprinkle generously with salt and pepper (I used 1 full teaspoon of Kosher salt). Drizzle tomatoes with olive oil. Add foil packet of garlic to tray. Roast until tomatoes are brown and tender (garlic will be very tender), about 1 hour. Cool slightly.

Unwrap garlic packet and peel cloves. Transfer cloves, tomatoes and any accumulated juices to a blender or food processor and pulse machine on and off until tomatoes are a chunky puree. Transfer tomatoes to medium pot and add thyme, crushed red pepper and stock and bring to a boil Reduce heat to a simmer and cook, uncovered, for 25 minutes. Remove from heat and adjust seasonings to taste.

Create cheddar lid: Preheat oven to 350. Arrange four ovenproof soup bowls, crocks or large mugs on a large, foil-lined baking sheet. Stir grated onion into the warm soup. (I love this last-minute suggestion of onion.) Float toast slice(s) in each bowl, buttered side up and divide grated cheese generously over top. (If you’re using a wide bowl, you might find that you want more cheese to create a thick, broiled lid.) Bake soups on tray for 15 to 20 minutes, until cheese on top is bubbling and brown at the edges. If you’d like it even more bronzed on top, preheat your broiler and finish soups for a minute or two under it. Serve immediately.
