What I Ate Wednesday! Today's theme is "ugly foods" - because things were not very pretty yesterday. It's a good thing that prettiness does not affect flavor or I would have been in trouble. Luckily, everything I ate tasted delicious. Obviously, I love a beautiful meal just as much as the next person, but sometimes beauty just ain't in the cards. Sorry 'bout it!

Well that's gross... but delicious!
Leftover turkey taco meat over a leftover baked potato,
topped with salsa and Greek yogurt. I could eat that every day! |

White bean & ham soup - far more delicious than it appears!
C & I put this together in the crockpot before work,
then blended half of it with the immersion blender before eating.

I did a pretty good job with fruits & veggies yesterday - my snacks were clean, and that soup was loaded with carrots, celery, and onion. I have been trying harder to get my recommended 5 servings a day, because I've realized that, while I eat well most of the time, I don't get nearly as much produce as I should. I'm looking forward to the farmers' markets opening in the spring!

Haha, I love this title!! Why is it that sometimes the tastiest foods just don't look pretty? That leftover taco meat sounds delicious though - I love everything Mexican! Also, I'm 100% with you on looking forward to the farmer's market! I am just kind of over boring winter veggies now. Bring on spring and summer fruits and veggies!
You're right, pretty food is fun, but sometimes yummy is ugly, or ugly is yummy, whichever! I like the idea of farmer's markets, but their schedule doesn't usually coincide with mine, so it's not a habit. And it's been too warm in SoCal for wintry foods! I did enjoy a cup of tortilla soup last might, though!
Like you said - good thing ugly food doesn't affect the taste LOL. I've found that no matter how hard I try, eggs are one food that I cant seem to make good. LOL

I'm SO READY for Spring. I just found out there's a farmers market so so close to where I live.
I have to literally grind up vegetables constantly and mix them with stuff so my husband doesn't know he's eating them! Otherwise I'd only get half as many as I do and he'd get almost none!
