Don't get me wrong, I love a good fancy guac as much as the next person. Fancy guac is awesome. I'm talking diced red onion, juicy tomatoes, fresh-squeezed lime juice, chopped jalapeƱo - the works. Sometimes we even add roasted corn (throw corn on grill, cook, cut off cob, add to guac...eat and be in heaven). But on week nights (and winter nights), that probably just isn't happening. I am not making fancy guac on a random Tuesday night. But that doesn't mean I'm not making SOME guac on a random Tuesday night! Enter: easy weeknight guacamole. You, too, can make your guac and eat it, too, any ol' night of the week. Just use my simple shortcuts!

Easy Weeknight Guacamole
Ingredients
- 1 ripe avocado
- Salsa
- Lime juice (bottled or fresh)
- Garlic powder
- Cumin
- Hot sauce
- Salt
Directions
- Scoop avocado out of shell into small bowl. If your avocado is too ripe, do a little surgery and remove the yucky parts. It's just going to get beaten into guacamole, though, so it doesn't have to be beautiful.
- Add 1/4 - 1/3 cup of your favorite salsa to the bowl. It can be hot, mild, medium, salsa verde, store-brand... whatever you have on hand and enjoy.
- Add a splash of lime juice (a tablespoon-ish), two dashes of hot sauce (again, use your favorite - we are currently loving Chipotle Cholula), and a sprinkle of garlic powder and cumin.
- Use a fork to mash the avocado and combine all the ingredients, then salt to taste.

Love this!!! While I agree - there is something amazing about fancy guac - I'm not trying to do that all the time! We make guac at home very similar to this all the time! We also love putting dried cilantro (you can find it in with the other Latin/Hispanic spices), since we never have it fresh on hand!

I could seriously eat a bowl of guac like it's yogurt. In fact, I had an avocado's worth of guac for lunch on Saturday...whoops! Love seeing what you add to yours, sometimes I hit the sweet spot with ingredients and sometimes I'm still missing something. I've never tried cumin in mine, but am intrigued!
